The Best Healthy Meal Ideas to Enjoy Quarantine

Who is going stir crazy?  Yea, me too!  I’m finding that spending literally all my time at home is somehow exhausting.  And it’s starting to get boring.  Especially when it comes to food.  I’ve always been focused on providing healthy meal options for the family, but it’s just harder right now.  I would have thought it would be easier; I’m at home so I can just pop into the kitchen quickly and make something.  Thought it would be good to share some healthy meal ideas that we are enjoying during quarantine.

 

Top 5 Quarantine Meal Ideas

1. Pumpkin pancakes

I’m a big fan of recipes from 100 Days of Real Food.  They are healthy, tasty, and practical for families.  I love making pumpkin pancakes for my family (using the pancake waffle recipe).  If pumpkin is hard to find, consider sweet potatoes.

2.  Turkey Zucchini Burgers

These are yummy!  And so very easy to make.  And vegetables too!!  See recipe here.  I use an air fryer, which makes them sooo juicy!

3.  Banana Bread

There are many recipes out here, but to keep it easy, I picked up the Simple Mills box mix.  All I had to do was add egg, water, and avocado oil, and bake!  Honestly, they didn’t look spectacular, but my kids literally beg for them.  The box mix is a bit pricey but it’s easy and always a slam dunk with the kids.

4.  Applesauce muffins

Another recipe from 100 Days of Real Food here.  These make great snacks.  I shred up spinach and sneak it in here to give the kids some extra vegetables.  They don’t really notice.

5.  Sloppy Joe’s

Great, easy recipe here.  It’s so easy and quick!  I double the batch and freeze extras for future meals!

These made me hungry but as a chef, been cooking during quarantine but these gave

Love your selection of choices here. Probably my favorite is banana bread – this is an old favorite with my partner also. During this crazy time, it’s important to do our best to try to cut out foods that are not good for us, especially if you aren’t able to get out and exercise like you normally might.

Omg I was just saying I’m tired of eating the same thing over and over lol. Sloppy joes are my favorite, idk why I haven’t made any recently but that’s on the menu tonight!

😂 the simple mills box is really easy. Making from scratch is hard because you mash bananas. The box is easy!
